We use what grows well here and source the rest from where it grows best. Always for flavour and goodness.
Lentils, onions, garlic, chillies from local soil. Coconut oil and curry leaves from the Pacific. Spices from South Asia.
We wash, chop, grind, and roast ‘til it smells like a Lankan kitchen. Then we dry, seal, and send it your way.
So it doesn’t matter if you’re on a mountaintop or wrecked after work, you can have a Sri Lankan curry in ten minutes. Ok 15 if you include the washing up and drying.

We got tired of the trade-offs. Quick, cheap and tasty usually means soulless and bad for you. It doesn’t have to be that way.
We keep it traditional: This is Parippu, a traditional dhal curry. A dish perfected over centuries in Sri Lanka. Same ingredients, same flavours. Done.
We keep it wholesome: Lentils washed till the water runs clear. Spices roasted and ground. Garlic cut and rested to activate the allicin. Everything with intention. Every step matters. Nothing added. Nothing stripped out. Just real food. Even the salt’s up to you.
We are upfront: Health comes first, that’s our priority. But so does the planet. That’s why 80% of our ingredients are local. We dry everything so we’re not shipping water, and we cut waste at every step.
Packaging is the tough one. It keeps food safe but costs the planet. We’re not there yet, and we won’t pretend otherwise. It matters, and we know it. So we’re testing, tweaking, and pushing for a solution that’s affordable and regenerative. The food system won’t change if we settle for good enough.
About
In Sri Lanka, aiyō is a reaction to life’s chaos. The word for when you’re lost for words. It was our mother’s favourite word. Used for everything from surprise to joy, frustration to affection. For us, it perfectly captures the complexity, vibrancy, and wholesomeness (and spiciness) of Sri Lankan food.
Aiyō began with a craving. The taste of home while roaming the backwaters, coastlines, and mountain tops of Aotearoa. Maybe it’s the South Asian in us, but no campsite ever felt complete without curry and rice. Not energy bars, not two-minute noodles. Curry. The kind that’s nourishing, warming, and soul-filling. Out there in the wild, surrounded by raw, untamed nature, it never made sense to eat food that wasn’t just as honest.
So we tinkered on camp stoves and in test kitchens. Needless to say, we ate a lot of lentils. Real ingredients. Nothing added, nothing taken away.
What started as a craving turned into something bigger. A product worth sharing. One that ties our Sri Lankan roots to the place we call home. That’s how Aiyō became a small family business from Wellington, Aotearoa, Making curries for the curious, for people as hungry for flavour as they are for adventure.
