What to Expect
I learnt about food in some pretty remote kitchens. Growing up in plantations around Sri Lanka, convenience simply wasn't an option. We cooked mostly over fire. There were no packets. No shortcuts. Everything we ate came from the people and the land around us.
When every meal takes time and effort, you begin to understand why recipes are the way they are. Every ingredient has a reason. Every technique solves a problem.
That's what Aiyō is about. We make traditional Sri Lankan food easier to cook without compromise.
In this three-hour class, we'll make curry powder from scratch, cook a selection of traditional dishes, and uncover the thinking behind them. Then we get to indulge in what we’ve made along with quite a few extra dishes to complete the experience.

Making Curry Powder (30 minutes)
Together we'll make a traditional roasted curry powder from scratch. Along the way you'll discover how roasting transforms aroma, flavour and depth, the role each spice plays, and why understanding curry powder is the key to understanding Sri Lankan cooking.
Short Eats (1 hour)
If you want to understand a country, start with their favorite snacks. Short eats are Sri Lanka's iconic street food. Small, flavour-packed bites found everywhere from roadside bakeries to family celebrations. They capture the island's rich mix of cultures and are where many of the techniques and flavours of Sri Lankan cooking first come together.
Together we'll make traditional Sri Lankan cutlets: crisp, golden croquettes filled with spiced fish or vegetables, potato, onion, chilli and curry leaves. They're crunchy on the outside, soft and fragrant within, and one of Sri Lanka's most loved comfort foods.
Curry & Rice (1½ hours)
A Sri Lankan curry isn't one dish, it's a conversation.
We'll prepare the heart of a traditional Sri Lankan meal, beginning with fragrant cumin rice and a traditional kale mallung of shredded greens, coconut, onion, chilli and curry leaves.
You'll then choose to prepare either a chicken curry or a young jackfruit curry, alongside Aiyō's signature dhal. As each dish comes together, you'll learn how balance, contrast and layering create a meal that is greater than the sum of its parts.
Finally, we'll gather around the table to enjoy everything we've cooked together. For those wanting the full culinary experience, Duncan's has selected the perfect beer pairings to accompany each course, available as an optional extra.
