An unlikely collaboration.
An unreasonable amount of flavour.
We've teamed up with master butchers Sven & Bettina Bischof. European craft, locally sourced meat, obsessive about doing things properly. Together we developed a curry base built on our Aiyō concentrate, refined specifically to work within a sausage.
The spices don't compete with the meat. They work with it. Given time to bloom and bind, they bring out everything the meat already had, then take it further. The fat renders well, the texture holds. Black pepper and curry leaf hit first, sharp and aromatic. Pandan follows, green and faintly sweet. A coriander-cumin finish, citrusy and earthy, with a chili warmth that stays with you long after the last bite.
Good spice doesn't shout. It reveals.
